Grilled Salmon with Lemon-Herb Dressing & Red Cabbage Microgreens

This light and flavourful dish combines perfectly grilled salmon with a refreshing lemon-herb dressing and a generous topping of crunchy red cabbage microgreens. Ideal for lunch or a light dinner.

Ingredients

  • 2 salmon fillets (skin-on or skinless)
  • 1 tbsp olive oil
  • Salt and black pepper to taste
  • Juice of 1 lemon
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • 1 clove garlic, finely minced
  • 1 tbsp finely chopped fresh dill or parsley
  • 1 cup red cabbage microgreens

Instructions

  1. Brush the salmon fillets with olive oil and season with salt and pepper.
  2. Grill the salmon over medium heat for about 4–5 minutes per side, or until fully cooked and flaky.
  3. In a small bowl, whisk together lemon juice, Dijon mustard, honey, minced garlic, and fresh herbs to make the dressing.
  4. Once the salmon is cooked, drizzle the dressing over the top.
  5. Finish with a generous handful of red cabbage microgreens on each fillet.

Serving Tip

Serve with roasted baby potatoes or a fresh green salad for a balanced, elegant meal.
