Grilled Salmon with Lemon-Herb Dressing & Red Cabbage Microgreens

This light and flavourful dish combines perfectly grilled salmon with a refreshing lemon-herb dressing and a generous topping of crunchy red cabbage microgreens. Ideal for lunch or a light dinner.
Ingredients
- 2 salmon fillets (skin-on or skinless)
- 1 tbsp olive oil
- Salt and black pepper to taste
- Juice of 1 lemon
- 1 tsp Dijon mustard
- 1 tsp honey
- 1 clove garlic, finely minced
- 1 tbsp finely chopped fresh dill or parsley
- 1 cup red cabbage microgreens
Instructions
- Brush the salmon fillets with olive oil and season with salt and pepper.
- Grill the salmon over medium heat for about 4–5 minutes per side, or until fully cooked and flaky.
- In a small bowl, whisk together lemon juice, Dijon mustard, honey, minced garlic, and fresh herbs to make the dressing.
- Once the salmon is cooked, drizzle the dressing over the top.
- Finish with a generous handful of red cabbage microgreens on each fillet.
