🥣 Green Soup with Pea Purée and Microgreens

A smooth and vibrant green soup made with peas and topped with fresh microgreens for a nutritious and visually stunning presentation. Perfect as a starter or a light meal.


📝 Ingredients:

  • 2 cups green peas (fresh or frozen)

  • 1 medium potato, peeled and diced

  • 1 small onion, chopped

  • 2 garlic cloves, minced

  • 3 cups vegetable broth

  • ½ cup coconut milk (or cream)

  • 1 tbsp olive oil

  • Salt and pepper to taste

  • Handful of fresh microgreens (any variety you grow)


🔪 Instructions:

  1. Sauté onion and garlic in olive oil over medium heat until soft and translucent.

  2. Add diced potato and cook for 2–3 minutes, stirring occasionally.

  3. Pour in vegetable broth, bring to a boil, then reduce heat and simmer until potatoes are tender (10–12 minutes).

  4. Add peas and cook for 3–5 more minutes, until bright green.

  5. Blend the soup using an immersion blender or countertop blender until smooth.

  6. Stir in coconut milk and season with salt and pepper.

  7. Serve hot, garnished with a generous mound of fresh microgreens.
