Baked Potatoes with Butter, Garlic & Microgreens

Baked Potatoes with Butter, Garlic & Microgreens

🔪 Ingredients

  • 4 large baking potatoes
  • 4 tbsp butter
  • 1 garlic clove, minced
  • 50g grated cheese (cheddar or your choice)
  • Salt and black pepper to taste
  • A handful of fresh microgreens (e.g. broccoli, radish, or mustard)
  • Optional: chopped chives or parsley for garnish

🍳 Instructions

  1. Preheat oven to 200°C (180°C fan).
  2. Wash and dry the potatoes, then prick each a few times with a fork.
  3. Place on a baking tray and bake for 50–60 minutes, until skins are crisp and insides tender.
  4. Meanwhile, melt butter and mix in minced garlic. Set aside.
  5. When potatoes are ready, slice open the tops and gently fluff the insides with a fork.
  6. Add a spoonful of garlic butter, a sprinkle of cheese, and let it melt.
  7. Top with microgreens and fresh herbs. Serve immediately.
