Charcoal Toast with Tomato, Ricotta & Microgreens
Rustic charcoal bread topped with juicy tomatoes and creamy ricotta.
Finished with vibrant, peppery microgreens for a bold and fresh bite.

🔪 Ingredients
- 4 slices of charcoal bread (or any dark rye/black bread)
- 2 ripe tomatoes, finely diced
- 100g ricotta cheese
- 1 tbsp olive oil
- Salt and pepper to taste
- A handful of fresh microgreens (e.g. mustard, red cabbage, or radish)
- Optional: balsamic glaze for drizzling
🍳 Instructions
- Toast the bread slices until crispy and dark around the edges.
- In a bowl, toss the diced tomatoes with olive oil, salt, and pepper.
- Spoon the tomato mixture over each toast slice.
- Add dollops of ricotta on top of the tomatoes.
- Sprinkle generously with fresh microgreens.
- Optional: drizzle with balsamic glaze for extra depth of flavour.
