Charcoal Toast with Tomato, Ricotta & Microgreens

🔪 Ingredients

  • 4 slices of charcoal bread (or any dark rye/black bread)
  • 2 ripe tomatoes, finely diced
  • 100g ricotta cheese
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • A handful of fresh microgreens (e.g. mustard, red cabbage, or radish)
  • Optional: balsamic glaze for drizzling

🍳 Instructions

  1. Toast the bread slices until crispy and dark around the edges.
  2. In a bowl, toss the diced tomatoes with olive oil, salt, and pepper.
  3. Spoon the tomato mixture over each toast slice.
  4. Add dollops of ricotta on top of the tomatoes.
  5. Sprinkle generously with fresh microgreens.
  6. Optional: drizzle with balsamic glaze for extra depth of flavour.
