Cucumber Rolls with Cottage Cheese & Microgreens

🔪 Ingredients

  • 1 large cucumber
  • 150g cottage cheese or ricotta
  • 1 tbsp olive oil
  • Salt and freshly ground pepper to taste
  • A handful of fresh microgreens (e.g. radish, mustard, red cabbage)
  • Optional: lemon zest or crushed garlic for extra flavour

🍳 Instructions

  1. Use a vegetable peeler or mandoline to slice the cucumber lengthwise into thin ribbons.
  2. In a bowl, mix cottage cheese with olive oil, salt, pepper, and optional lemon zest or garlic.
  3. Place a small spoonful of the cheese mixture at one end of each cucumber ribbon.
  4. Add a few microgreens on top and gently roll up into a spiral.
  5. Secure with a toothpick if needed. Chill before serving for best texture.
