Cucumber Rolls with Cottage Cheese & Microgreens
Thin ribbons of cucumber rolled with cottage cheese and a touch of olive oil.
Topped with fresh microgreens for a crisp and refreshing appetiser.

🔪 Ingredients
- 1 large cucumber
- 150g cottage cheese or ricotta
- 1 tbsp olive oil
- Salt and freshly ground pepper to taste
- A handful of fresh microgreens (e.g. radish, mustard, red cabbage)
- Optional: lemon zest or crushed garlic for extra flavour
🍳 Instructions
- Use a vegetable peeler or mandoline to slice the cucumber lengthwise into thin ribbons.
- In a bowl, mix cottage cheese with olive oil, salt, pepper, and optional lemon zest or garlic.
- Place a small spoonful of the cheese mixture at one end of each cucumber ribbon.
- Add a few microgreens on top and gently roll up into a spiral.
- Secure with a toothpick if needed. Chill before serving for best texture.
