Fresh Microgreens & Cucumber Salad
A crunchy and vibrant salad made with crisp cucumber and a fresh mix of microgreens.
Tossed in a light dressing — quick, clean and delicious.

🔪 Ingredients
- 1 small cucumber, diced
- 1 cup mixed microgreens (e.g. radish, kale, mustard, red cabbage)
- 1 tsp olive oil
- 1 tsp lemon juice or apple cider vinegar
- Salt and freshly ground pepper to taste
🍳 Instructions
- Dice the cucumber into small cubes.
- In a bowl, mix cucumber with microgreens.
- Drizzle with olive oil and lemon juice or vinegar.
- Season with salt and freshly ground pepper.
- Gently toss and serve immediately.
